Did you watch the same movie?
Nobody let Loki go, he was in cuffs and a gag at the end of the movie.
Banner was brought in to trace the gamma emmissions that nobody else could trace (though Fury probably had a secret plan to get the Hulk there).
Banner realises Shield always knew where he was, and since he can't be hurt he has no fear of going with them.
Loki is an Asgardian, not a god. Loki was going to conquer the whole planet but the wormhole could only be opened at one point (he needed the cube and the Stark power source).
The cell might have killed Thor if he hadn't escaped. Falling to the ground at least knocked Hulk out cold.
The mirror trick wouldn't be very good if people didn't keep falling for it.

In my opinion the Thor and Captain America movies were sub-par. Iron Man was great, but inevitably suffered from being an origin story.
